Bakers cite a desire to balance coconut’s richness with something tart. Mango delivers both acidity and color, giving the cake a bright stripe inside each piece. Prices for a slice range from $8 to $11, depending on the bakery and the neighborhood.
With school back in session and weekend gatherings moving indoors, demand for layered cakes has picked up.
